Despite the colder temperatures outside, I’ve been really into smoothies lately. I may have to wrap up in a blanket to drink them and chug hot tea afterward, but it’s worth it! For a simple smoothie, just throw in fruits and leafy veggies you have in the fridge (using foods of the same color will help it look nicer, but who really cares?). Smoothies pack in tons of nutrients, and can be pretty delicious. This mint chocolate chip smoothie is basically a milkshake… Which is super exciting because I don’t know about you, but I’m not aware of many healthy milkshakes!
What you need (serves 1):
- 2 cups spinach
- 1/2 cup milk or milk alternative (like almond milk)
- 1/2 avocado, about 2 oz.
- 1 scoop chocolate protein powder OR 2 Tbsp cacao powder
- 1/4 cup fresh mint OR 1 drop of mint extract
- 2 Tbsp dark chocolate chips or cacao nibs (28 g)
- Up to 1 cup water, added as needed
- Stevia or sugar to taste
- Ice, optional
What to do:
- Blend all ingredients in a blender until… blended.
Another great thing about smoothies is that you can make them ahead of time! Make this mint chocolate chip smoothie the night before and you’ll be out the door in record time in the morning (and the people who live with you will appreciate not being awoken by the blender at the crack of dawn). I’ve enjoyed this chili breakfast this week, but my smoothie game is likely on hold until about March. Until then, I’ll have to come up with some delicious, warm breakfast recipes!
